CELEBRITY chef Tom Bridge is honouring his commitment to launch the Bolton Hospice’s Anniversary Recipe Book at Bolton Market today — despite recently undergoing major eye surgery.

He has had to cancel a number of events, but Tom, pictured, has stood by his charity work and is looking forward to sharing some delicious, healthy recipes with shoppers and traders with the help of local volunteers.

Tom will be at the kitchen demonstration area at the market from 11am until 1pm.

He will be making smoothies and some healthy eating recipes straight from the hospice recipe book using produce from local market traders.

Tom, who has written 21 cookbooks and founded his own pie society, went to the opticians after noticing he had cloudy vision in his right eye.

Optometrist Mohammed Salim Patel, aged 24, diagnosed Tom with a detached retina. It could have left him blind but the chef under went surgery at the Manchester Royal Hospital and is now recovering from the setback.
