A GREEK-INSPIRED restaurant could be open in Westhoughton's high street just in four weeks as work to convert the building continues.

Chef Odysseas Hatzitzikas and partner Nicki Gillon are currently carrying transforming an old dry cleaners in Market Street.

And according to Miss Gillon, the premises could be open in four weeks — around the end of September.

In a recent statement, Mr Hatzitzikas, who has worked in kitchens across the described the venture as a 'modern comfort food' restaurant.

He said: "After working all over Europe as a chef I’m now looking to focus on my passion of locally sourced great food at a good price, in the place I live and love.

"Westhoughton is currently a expanding town with huge potential, I hope to be included in the rapid growth."

The couple have spoken of their excitement when they took their plans to Westhoughton Town Council to seek members' support.

Mr Hatzitzikas said at the meeting: "It will be comfort food with Greek influences on the menu. We are so excited to open this.

"We are almost ready and we have had so much positive feedback from everyone in Westhoughton."

The restaurant has been well received in the town and town councillors have wished it success.

Cllr David Wilkinson said: “I have seen the pictures and I think it is a very interesting and different concept to what Westhoughton has had before.

“I think it will be different and again it would attract a different group of people who live in Westhoughton and outside.

“It will be a real addition to the culinary scene in Westhoughton.

“I know some people complain about what’s happening on Market Street but the world is changing.

“Retail habits have changed and some shops have gone forever. Food and beauty and all these kinds of things are now key drivers on most high streets.

“I do hope that the couple have the best of success.”
