Bolton Market legend Alain Job is serving up a sweetbread treat at the Bolton Food and Drink Festival this weekend.

Mr Job, who runs Nkono, in the market's food hall, is selling his "Mutton Bollocks" with ziggy ziggy sauce over the four days and expects to sell out.

 

The glands are locally sourced from Bolton Market trader Mohammed Hussain and were specially ordered for the festival.

Mr Job said: "We thought why not take what's on the market down to the food festival and let the people try them for themselves?

"We believe they will be the main attraction!"

Some lucky shoppers in Bolton Market got the chance to try the delicacies this afternoon.

Roger Huson from Norfolk is visiting friends in Bolton and happily tucked in, saying he had been served similar at Yarmouth Market, he remarked on the "jelly-like" texture.

 

Mr Job said he enjoyed cooking the meat on his barbecue because "they don't shrink" like people might expect.

Sisters Kath Smith and Alwyn Blundell from Farnworth also gave them a try. Mrs Smith said: "It's worth a try! It's spicy, he's spiced it up."

During the food festival Nkono will have their barbecue set up selling their famous goat curry and some vegetarian options for those with less adventurous tastes.
