IT’S often the food of choice for city workers ­— and now people can experience the raw pleasure of eating sushi right here in Bolton without the eyewatering price tag.

Sake Sushi opened four months ago and chef Albert Giron says demand for the Japanese delicacy is off the scale.

“Everybody is eating sushi now," he said. "Back in 1991 when I worked in Manchester we used to sell smoked salmon and a lot of people did not know what sushi and said ‘we are not allowed to eat raw fish’.

“But now everybody is eating it, because it is healthy and people do care about what they are eating.”

He added: “We have had people coming in curious. They have never had sushi before and want to try it. Then they start coming every day for lunch.”

Albert said: “I put the sushi together it is all fresh and all made to order. Sushi is affordable, it is not expensive here like it can be in other places, in London you can pay £30 and you can get here for £4.”

Hayley North, Albert’s partner said they had worked in many Japanese restaurants around the country.

Then a chance visit to Bolton during Ironman UK led to the idea of opening a restaurant in the town.

Hayley said: “We saw how busy it was and we realised that there wasn’t one here. When the shop in Bridge Street became available, I liked the location and that was it, we took the shop and opened it.

“Business has been really good, people are amazing in Bolton, I’ve worked in many places, Bolton is the nicest place we have ever worked.

“Sushi is becoming more popular because it is healthy, a lot of the younger generation like it.”
