STUDENTS at Bolton School Girls’ Division watched a whizz in the kitchen to see what sets him apart from other chefs.

Award-winning Lewis Gallagher, head chef at the Provenance Food Hall and Restaurant, Westhoughton, showed off his skills to Year 10s studying Food Preparation and Nutrition.

Winner of North West Young Chef of the Year in 2012, Mr Gallagher gave the students a talk, followed by a full demonstration of quartering a chicken.

The students were then shown how to use the cuts in a variety of dishes, including salt and pepper chicken wings and BBQ kebabs with aubergine.

Having previously worked as Head Pastry Chef at Blackburn’s Stanley House Hotel and Spa, Gallagher won the Acorn Scholarship in 2013.

Now in its 18th year, the winner of the prestigious title receives a prize valued at more than £5,000, including a £2,000 bursary for professional training opportunities. Mr Gallagher has gone on to work in many establishments.
