BOLTON cook Debbie Halls Evans will be going underground for her latest pop-up venture.

The winner of last year's The Taste cooking programme, featuring TV foodie Nigella Lawson, will be offering a three-course fine dining experience in just 30 minutes to launch The Market Place's vaults.

The four-day event, dubbed '3 in 30' will be the first time the new vaults will have hosted an event of its kind and will complement the Bolton Food and Drink Festival, which is taking place at the same time from Friday, August 28 and Monday, August 31.

Using very limited resources Mrs Halls Evans will be serving up tomato consommé with seasonal vegetables and tomato concasse, followed by beetroot sacchetti with ragu d'anitra (duck ragu) with walnut sauce, and then ile flottante with pink praline and chocolate mocha sauce.

There will also be a mini drinks festival supporting local micro brewers of beer, gin and whiskey.

Mrs Halls Evans said: "The whole experience is to help extend the footprint from the Food and Drink festival and get as many people to Bolton as possible.

"It'll be the first time that the vaults have been open to the public and the first time food will be served down there too — it's really exciting."

Mrs Halls Evans will be the cooking upmarket cuisine every 30 minutes, five times a day, for 30 people a time.

She said: "It'll be a pop up restaurant but it will be a real challenge because there are literally no kitchen facilities there. I can't fry anything — I think I'll just have a hot plate. But that's what makes pop-ups so much fun.

"Because of this I have chosen a menu that is easy to eat in that time, enjoyable and full of flavour. I can't wait."
