MASTERCHEF Tom Bridge knew exactly where to buy his ingredients for a brand new food programme - Bolton Market.

And when "Cooking Clinic" is screened on Granada tonight, it will show a nostalgic trip to his Bolton home for this national cookery expert.

"I love coming back to Bolton Market," said Tom, who used to sell shoes at the Ashburner Street site.

"There's a huge variety of fish, and it's all really, really fresh. In fact, all the produce here is high quality, but at reasonable prices."

And on his visit to the revamped Market, still off Ashburner Street, after Tom had chosen his ingredients, he also gave a quick master-class in regional cooking.

Viewers this evening will be able to watch Tom create tripe and onions, sweet and sour rabbit, fresh fish cakes and pigs' trotters stuffed with black pudding.

But lucky local Market shoppers were able to actually sample these Northern delights during the Bolton filming.

Cooking Clinic, presented by Kim Hughes, has a unique twist. "As we're on air at 6.30pm, we reckon lots of people will be in the kitchen actually cooking," said Kim.

"We are, therefore, setting up 'phone lines so anyone can call the studio, live, with any problems. And our experts will sort out your disasters."

Tom - who has a string of best-selling cookery books to his credit - will be on the other end of the line if you ring 0645-454444.
